Functional food is one that contains a nutrient or non-nutrient component, with a selective effect on one or several functions of the organism, with an added effect above its nutritional value and with positive effects that justify claiming its functional or even healthy character20. They are processed foods to obtain an extra benefit by elimination, reduction or addition of some component. They do not cure or prevent themselves and are not essential in the diet. The presentation has to be as food and must show its effects on the amounts normally consumed in the diet.
