Camden’s Namaaste Kitchen and Bloomsbury’s Salaam Namaste, the award-winning Indian restaurants from Chef Patron Sabbir Karim, are taking diners on a gastronomic tour of India through 2015, highlighting the unique and diverse nature of Indian regional cuisines. For June and July they have created a sumptuous feast of Rajasthani Game, bringing an authentic taste of northwest India to northwest London.

Of all the states, Rajasthan is perhaps the most tribally diverse, artistically decorative, architecturally magnificent and regal in India. When India was heavily forested, game was abundant and popular, especially among the Rajput rulers in Rajasthan. Spicing is generally robust and favours dark spices such as clove and black pepper, which provide both flavour and heat. Game cooking was often done outdoors on the hunt, so methods were simple, ingredients were few and dishes highlighted the taste of the meat.

Starters will include a Wood pigeon Breast with red onion and coriander chutney which is robustly spiced and cooked in a tandoor, Duck Satay with apple chutney and a whole Tandoori Quail with black sesame seed masala.

Main courses will be Banjara Venison Curry infused with clove and black spaces, Wild Rabbit leg Achari cooked in pickling spices served with Missi Roti - this type of dish would be cooked on a 'shikaar' or hunting expedition when the Rajput princes would go out on extended trips to hunt game with their entourage. Then there is Jungle-style Guineafowl Curry – a simple and fiercely delicious dish cooked on the bone with raw spice, black cardamom, cloves and roasted chilli.
