South India has a hot, humid climate in its states are coastal. Rainfall is abundant in fresh fruit, vegetables, and rice. Andhra Pradesh produces fiery Andhra cuisine is yet has a scope of seafood in its coastal areas.
By and large, South Indian cuisine is possibly the hottest and most desirable of all Indian food. Meals around rice or rice-based dishes. Rice with sambar (a soup-like lentil dish seasoned with whole condiments and chilies) and rasam (a hot-sour soup-like lentil dish), dry and curried vegetables, meat dishes, and a host of coconut-based chutneys and poppadums. No South Indian feast is complete without rice in some form or other. It’s either cooked rice or idlis (steamed cakes made from rice batter), dosas, or uttapams (pancakes made from a batter of rice and lentil flour). Daals (lentils) are also a part of most meals.

Relish this sophisticated dosa with veggie garnishing!!! Uthappam is a type of dosa from South India. Unlike a typical dosa, which is crisp and crepe-like, uttapam is thicker, with toppings. The word is from Appam and Utthia or Uttria, indicating Poured-Appam. Uttapam is similar to a dosa but with the same batter. The main difference is that it is made thicker and softer than dosa. Unlike a dosa, which is crisp and crepe-like, uttapam is a thick pancake with toppings cooked right into the batter.

The proper proportion of ingredients, level of fermentation, and consistency of the batter are to make perfect uttapams. Though the methods vary slightly from house to house and restaurants, the taste is more or less identical. To make delicious uttapams batter needs to be fermented.

Onion Chilly Uthappam (v/gf):
Podi uthappam is one of the most favourite uthappam varieties. We can have it for breakfast, dinner, or just as an evening snack with hot coffee or tea. For making Podi dosa, the dosa batter is added to 1/4 cup of water if the batter is too thick. The Podi is sprinkled over and cooked under a light flame.

Masala Uthappam (v/gf):
Masala Uttapam - toppings of mixed vegetables such as onions, tomatoes, green bell peppers, green chilies, cilantro. Onion Uttapam - topped with just finely chopped onions, chilies, and cilantro. Tomato Uttapam - topped with circles of thinly sliced tomato, chilies, and cilantro, Masala Uttapam is a variety of uttapam cooked with spicy potatoes. Masala Uttapam is another easy tiffin box recipe for kids.

Every South Indian dish is special in its way where Uttappams stands out as one of the favourite among the natives. Before the advent of Pizzas & burgers, Uttappams was the South Indian form of Pizzas. Even now, Uttappams are the favourites for our people. Our people, our dish!!!
