The group has submitted a development application to revamp the Brisbane destination into a dynamic hospitality hub.
Renovations are set to begin pending approval of the application, with a projected completion timeline of seven months, aiming for a grand opening in the first half of 2024.
Plans include demolishing the existing café to make way for a two-story Pavilion, which will feature a dining area, a gin distillery, and a First Nations herb and good garden. Additionally, the rooftop will host experiences led by the traditional owners of Mount Coot-tha, offering native food tastings and sharing stories from local legends.
Guests will also be able to enjoy panoramic views from a connecting bridge that leads to a dedicated viewing platform.
The existing heritage-listed restaurant will undergo a transformation to provide an elevated dining experience alongside a casual bar. The ground floor will be converted into a theatre showcasing the culture and history of the Mount Coot-tha's traditional Indigenous owners.
Godfrey Mantle, owner of Mantle Group Hospitality, stated, "What we are proposing is transformational and will establish The Summit as an iconic and exciting destination for both locals and visitors to Brisbane."
He further explained that the restaurant and café are in urgent need of updates, and the renovations aim to optimize the venues to take full advantage of the stunning views.
Mantle Group Hospitality is collaborating with architects Hogg and Lamb for the proposed upgrades.
